I'm talking about those soft chocolate cookies, not the chocolate chip cookies.Does anyone know how to make ice cream sandwich cookies?

This recipe involves two steps--mixing the cookie dough and filling the baked cookies with ice cream.
The results are worth the effort: the finished product looks like store-bought ice cream sandwiches but tastes even better.
Sandwiches Ingredients
1 stick margarine
1 cup brown sugar
2 eggs
1 tsp. vanilla extract
1/2 cup cocoa powder
2 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
Half-gallon carton vanilla ice cream
KIDS' COOKING SKILLS: Use this recipe as an opportunity to teach kids how to make soft and chewy cookies and decorate cookie dough with the tines of a fork.
Directions
In a medium-sized bowl, cream the margarine and brown sugar (using margarine instead of butter and brown sugar instead of granulated sugar produces a chewy, soft cookie). Beat in the eggs, one at a time, then the vanilla extract.
In a separate bowl, stir the cocoa, flour, baking powder and salt. Gradually add to the margarine mixture. Beat until well combined. Gather the dough into a ball and chill for at least 1 hour.
Heat the oven to 375 degrees. On a lightly floured surface, roll out the dough to 1/4-inch thick. Use a ruler and a sharp knife to cut out rectangular pieces.
(We made large cookies, about 2 1/4 by 5 inches, but you can make them smaller.)
Transfer the cookie rectangles with a spatula to an ungreased baking pan. Ask your child to use the tines of a fork to make patterns on the cookies.
Bake the cookies for 8 to 10 minutes or until set. Cool on a cooling rack.
Meanwhile, cut rectangular blocks from the ice cream. To do this, peel back the half-gallon carton from the ice cream, and cut 1/2-inch-thick slabs that are roughly the dimensions of your baked cookies. Return the blocks to the freezer.
sandwiches Once the cookies have thoroughly cooled, place one ice cream block between two cookies. Trim the sides with a knife, wrap the sandwich in foil, and freeze for several hours. Repeat until you have used all the cookies and ice cream.

CHOCOLATE CHIP COOKIE ICE CREAM
SANDWICHES
Preparation time: 15 minutes. Cooking time: 15 minutes.
2 1/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 c. (2 sticks) butter, softened
3/4 c. firmly packed brown sugar
3/4 c. sugar
1 tsp. vanilla
2 eggs
1 c. chopped nuts
1 (12 oz.) pkg. Baker's semi-sweet real chocolate chips
2 round pts. ice cream
Mix flour, baking soda and salt, set aside. Beat butter, sugars, vanilla, and eggs until light and fluffy. Blend in flour mixture. Stir in nuts and chips. Drop 1/4 cup dough, 3 inches apart, onto ungreased baking sheet.
Bake at 375 degrees for 11 to 13 minutes or until golden brown. Cool on rack. Remove package from ice cream, cut into desired number of slices. For each sandwich place ice cream between two cookies. Wrap in plastic warp, freeze. Makes 8 to 10 sandwiches
Here's a variation on a homemade ice cream sandwich. It's very yummy!
Giant Ice Cream Sandwich
2 packages brownie mix (the ones that fit in an 8x8 inch pan)
1 cup semi-sweet chocolate chips
4 cups vanilla ice cream, softened
1/2 cup english toffee bits
Sauce:
1/3 cup evaporated milk
1/4 cup butter
1/3 cup chocolate chips
2 cups powdered sugar
1/2 teaspoon vanilla
Prepare brownie mixes according to package and add chocolate chips to batter. Pour into 2 greased 9-inch round cake pans. Bake at 350 degrees for 25-30 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely. Freeze for 2 hours or until easy to handle. Spoon ice cream on top of one brownie layer; top with toffee bits and second brownie layer. Wrap in plastic and freeze until set. Remove from freezer 10-15 minutes before serving.
For sauce, combine milk, butter, and chocolate chips in saucepan. Heat until chips are melted, stir until smooth. Stir in powdered sugar and vanilla.
Cut the ice cream sandwich into wedges and serve with chocolate sauce.
