The perfect Fillet steak with whisky,peppercorn and cream sauce?

Is there a time guide to cooking the perfect steak for each choice of rare, medium and well done? What oil is best for the tastiest steak? Grill pan or frying pan? Does anyone know the recipe for a whiskey,peppercorn and cream sauce?

ok so cooking times as follows:





Cooking times for fillet steaks: Rare - 2 minutes 15 seconds each side Medium-rare - 3 minutes 15 seconds each side Medium - 4 minutes 30 seconds each side





Sunflower or vegetable oil, for deep-frying


2tbsp olive oil





Heat the sunflower or vegetable oil to 120C in a deep-fat fryer. Rinse the chips with fresh, cold water and pat dry with kitchen towel. Cook gently for 8 to 10 minutes until chips are soft but still pale. Drain on kitchen towel.





3 Meanwhile, heat the olive oil in a large pan until it just starts to smoke. Brown the steaks quickly on both sides, then lower the temperature to medium and continue to cook according to your taste. Put the steaks on a warmed plate to rest for 5 minutes while you finish frying the chips.





4 Increase the heat of the deep-fat fryer to 180C. Return the chips to the hot fat and cook for 2 to 3 minutes more, until crispy and golden brown. Drain on kitchen towel, then season with salt. Serve on a warmed plate with the juices from the pan drizzled over the steak.

Whiskey Peppercorn Sauce





1 1/4 cups beef broth


1 teaspoon cracked black pepper


1 fluid ounce whiskey


1 cup heavy cream


In a small saucepan over medium heat, combine beef broth and cracked black pepper. Simmer until reduced to 1 cup, stirring frequently. Add1 ounce whiskey and 1 cup cream. Continue simmering until reduced to 1 cup. Remove from heat and set aside.





Heat frying pan gently and add oil or fat, then the steak.


Cook over a high heat


Cook to the following times


Minute Steak - 1 minute cooking each side


Rare Steak - 3-4 minutes each side, depending on thickness.


Medium Steak - Cook as Rare, then 3-4 minutes each side on medium heat


Well Done Steak - Cook as rare, then 4-5 minutes each side on medium heat
I'm going with Crissy's recipe, I think I will use that one for myself too.
It is impossible to time cooking steak, you cook by touch, the firmer the meat feels the more its cooked, so prod the steak with your index finger before cooking to get the feel of it, remember how it feels raw, squidgy's rare etc.


Whisky Sauce


While steak is resting, saute 1chopped shallot in the meat juices, add whisky and flame, add 1/2pt double cream, freshly ground pepper and salt
