INGREDIENTS

3 ounces (75g) oats

2 ounces (50g) golden granulated sugar

2 ounces (50g) hazelnuts, chopped

录 pint (150ml) milk

2 eggs separated

3 ounces (75g) light muscovado sugar

Approx 6 ounce (175g) can evaporated milk, well chilled

Brandy or orange liquer, for serving

METHOD

Mix the oats, granulated sugar and hazelnuts together and place under a grill until crisp and lightly toasted.

Set aside to cool.

Pour the milk into a heavy-based saucepan and bring gently to simmering point. In a bowl, whisk the egg yolks and muscovado sugar together until thick and light then whisk in the milk. Return the mixture to the rinsed pan and cook over a low heat, stirring constantly, until thickened. Remove from the heat and set aside to cool, stirring occasionally.

In a bowl, whisk the evaporated milk until thick and light. In another bowl, whisk the egg whites until stiff but not dry. Fold the evaporated milk and oat mixture into the custard followed by the egg whites.

Spoon the mixture into a contained. Cover and freeze until firm.

About 30 minutes before serving, transfer the ice cream to the refrigerator. Serve with a spoonful of brandy or orange liqueur poured over.
