I baked a cake that has sour cream frosting last week, and I left it out over night and ate it the next day with no problems. I made it again this week, and am now wondering why I should refrigerate it if it gave me no problems before?How long does it take for Sour Cream to go bad sitting out?
You got lucky last week. Don't chance it, refrigerate it.





Milk products (milk, yogurt, sour cream, buttermilk, whipped cream) are spoilable. Think about it, you could drink a glass of milk that has sat out for four hours or so, but would you want to? Same thing applies for all milk products.

Just because you didn't get sick this time doesn't mean you won't next time. It was probably cool enough during the night for it not to spoil, but I wouldn't risk it again.
