How do you make like a creamy sauce for pasta that isnt made with just thickened cream?

I find it way too rich and just boring i want a light and creamy sauce with not a lot of butter how would i do this?How do you make like a creamy sauce for pasta that isnt made with just thickened cream?
One way is to substitute half the cream with milk and the butter with extra virgin olive oil. That will immediately reduce the feeling of heaviness.





Another is to make a pesto instead of a sauce.





INGREDIENTS





* 1 cup packed fresh spinach


* 1 cup packed fresh basil


* 3/4 cup pine nuts


* 1/2 cup walnuts


* 24 small black olives


* 4 cloves garlic


* 1 cup grated Parmesan cheese


* 1/2 cup grated Romano cheese


* 1 cup olive oil


* 1 dash black pepper





DIRECTIONS





1. In a food processor, blend spinach, basil, pine nuts, walnuts, olives and garlic. Blend in Parmesan cheese and Romano cheese. Gradually add oil, processing until smooth; season with pepper. Serve at room temperature.





This makes 12 servings





A third way is to make a wine butter sauce (has more butter than you want though)





* 2 Tbs. shallots, finely diced


* 1/2 cup white wine


* 1/2 cup fish stock or chicken stock


* 2 Tbs. heavy cream


* 1 cup unsalted butter, chilled and cut into cubes


* 1/8 tsp. white pepper





Combine first 3 ingredients in a small heavy saucepan over medium high heat. Simmer 4-5 minutes until mixture is reduced to a glaze. Stir in cream and reduce again to a glaze. Remove from heat and let cool 2 minutes. Add chilled butter cubes and gently stir with a wire whisk until incorporated. this is what iuse for my pasta dishes changing the stock for what ever i'm having with the pasta





BASIC WHITE SAUCE


1oz Margarine


1oz Flour


1 pt Milk/Veg Stock





Melt margarine in pot.


Stir in flour to make a thick paste.


Gradually whisk in milk and bring to the boil whisking until smooth.


(You can add all the ingredients to the pot at once then bring to the boil whisking all the time)
Use cream fraiche instead. It's creamy, low fat and you can add various flavourings to it. I like pouring creme fraiche onto hot pasta, adding grated cheese and stirring until it has all melted, to create a creamy, cheesy yet different pasta sauce.

You can substitute the cream for light cream cheese or sour cream. Just stir those into your sauce until they melt. Of course, you can always substitute milk for cream as well.
Extra Virgin Olive Oil


Cream Cheese


salt/pepper


fresh chopped Basil


milk





Heat on low,while stirring


pour over pasta and top off with grated Romano or Parmesan
Try adding some cheese to your sauce to thicken it up.
